1. I've heard "middling" and use it myself
3. "phone eats first" -> "for the gram"
5. similar to "third wave coffee" -> craft coffee
12. short-staffed -> pretty much everywhere, be nicer when eating out

I've heard "enthusiast", or even "tourist". Doesn't roll off the tongue so much though.
